The vines are treated as if they are part of our family, we
help them produce the best fruit possible given the climate
they have to face. To reach this goal, the team focuses attention
on the vineyard details.
- Each vine is crop-thinned once or twice a year (depending
upon the weather during the growing season) to maintain
the balance and promote the ideal concentration of fruit.
Usually 20 to 25% of the fruit is removed.
- The canopy is carefully managed to give beneficial competition
to the grapes, as well as the right protection from the
sun.
- The clusters are separated from one another to allow enough
sun and air to pass in between them, to achieve full maturation.
This will soften the tannins.
- "Nettoyage" is the term used on the property
to describe the crew's last pass in the vineyard after veraison,
specifically removing fruit that does not meet our standards.
- Just before harvest, the vines are leaf-plucked to ensure
full maturity of the fruit and to minimize the leaf material
in the harvest bins.
- And because it does not rain between bloom and harvest,
the grapes are rinsed with water for dust control and better
maturation.
